A CLOSER LOOK · MANUFACTURER TEST DATA

The detail behind
the cutting surface.

Two published comparisons help explain CookinCut’s material performance. The figures describe the stated test conditions, not a guarantee of service life.

01 / REPEATED CUTTING

50,000 cuts

Recorded scratch depth after approximately 17 hours of continuous testing.

CookinCut PRO0.58 mm
Wood comparison1.53 mm

Cutting pressure: approximately 0.2 MPa. Micrographs show brown CookinCut PRO; the PRO BLACK brochure states equivalent characteristics. Scratch depth is not a lifespan measurement.

02 / WATER ABSORPTION

Low water uptake

Water absorbed per unit of surface area in the manufacturer’s immersion comparison.

CookinCut0.004 g/cm²
Wood comparison0.065 g/cm²

100 × 60 mm samples immersed in tap water at room temperature for 3 days. Calculated from mass change divided by total surface area. Low absorption does not replace proper cleaning.

CARE IS PART OF THE CHOICE

A working tool.
A considered routine.

Cleaning, drying and surface maintenance should follow the instructions for the exact model. The film shows the published two-step routine for a synthetic rubber board: the blue medium-grit side first to lift stains and discolouration, then the pink fine-grit side to smooth the surface. Rinse the board well and wipe it dry with a clean cloth.

The set in the film is Wabi Sabi WARE, H&K’s own brand, made for synthetic rubber cutting boards: MS-84 (finishing set) and MS-83. Ask us to quote them together with your boards.

Boards for sushi counters and fish preparation

Rubber boards are a standard choice on sushi counters and in fish preparation rooms in Japan. The surface is dense enough to protect a thin single-bevel edge, and it does not absorb water the way a wooden board does.

  • Board size: for filleting and portioning whole fish, 600 × 300 mm or larger gives room to work. A sushi counter with limited space often uses 500 × 250 mm.
  • Thickness: thicker boards stay flat under repeated heavy cuts. Check the sink and dishwasher opening before choosing.
  • Colour: the black PRO BLACK range is often chosen for fish work because scale and skin residue are easy to see against it.
  • Separation: many kitchens buy one board per task — fish, meat, vegetables — rather than one large board.

If you are fitting out a sushi restaurant, tell us the counter length and the tasks. We can quote boards together with sushi and fish preparation tools and Japanese knives in one shipment.

Wholesale, minimum order and export

H&K Trading buys directly from Parker Asahi and exports CookinCut boards to retailers, distributors and professional kitchens. These are the commercial points we settle before the first shipment.

  • Minimum order: set per model and destination. Mixed pallets of several sizes are usually possible, which keeps a first order small. Send the models and quantities you have in mind and we will confirm the minimum.
  • Trade terms: FOB Japan or CIF to your port.
  • Documents: invoice, packing list and the certificates your customs office asks for. Where the goods qualify, a preferential certificate of origin under Japan’s EPA or FTA agreements can be arranged, which may reduce the duty you pay.
  • Freight: rubber boards are heavy. We confirm carton size, pieces per carton and pallet or container loading so you can calculate freight before you order.
  • Consolidation: boards can ship together with knives, sharpening stones, sushi tools and other Japanese items in one container.
  • Lead time: stock models are usually shorter; custom sizes need manufacturer confirmation.

Frequently asked questions

Do you provide a catalogue?

The manufacturer’s English brochure is linked below. Include the model reference when requesting a quotation.

Can I order custom dimensions?

Send the required dimensions and quantity. Custom processing or sizes need manufacturer confirmation.

What are the minimum quantity and delivery time?

These depend on the selected model, order quantity and destination. We confirm them for each quotation.

Are you a Parker Asahi distributor?

We buy directly from Parker Asahi and export their CookinCut boards. If you need exclusive distribution rights for your market, tell us the country and channel and we will raise it with the manufacturer.

Can you supply CookinCut wholesale to my country?

Yes, in most markets. Send the models, quantities and destination port, and we will confirm availability, freight and duty points.

Which board suits a sushi restaurant?

Tell us the counter size and what is prepared on it. For whole fish, kitchens usually choose 600 × 300 mm or larger; the black range is popular for fish work.

Can a rubber board be resurfaced when it is scratched?

Yes. A scraper or planing service can restore the surface, which is one reason kitchens keep these boards for years. We also supply scrapers, so ask when you order.
