Grit guide

Which grit should a knife shop stock?

A lower number means a coarser stone. For most shops, a good starting range is one medium stone (#1000) and one finishing stone (#3000 or #6000). Customers who already own a medium stone can add #2000 or #6000.

#120 – #600

Coarse

Repairs chips and reshapes a damaged or very dull edge. Used only when needed.

  • Ask us

#800 – #2000

Medium

Everyday sharpening. This is the stone most customers need first.

  • #1000
  • #2000

#3000 – #8000

Fine

Refines and polishes the edge after the medium stone.

  • #3000
  • #6000

The grit ranges are general guidance. The chips show the Shin Nagura grits we supply.

For your customers

Sharpening in three steps

Customers who buy a Japanese knife often ask how to keep it sharp. A short, simple routine helps them start. You can share these steps in store or online.

  1. Prepare the stone. Soak or wet the whetstone as the maker instructs. Set it on the stand so it cannot move.
  2. Keep the angle. Hold the blade at a steady angle and sharpen the full length. The MS-70 holder helps beginners.
  3. Finish and care. Move to a finer stone if needed. Rinse and dry the knife, and oil carbon-steel blades.

Why stock sharpening

We ship them with your knives, cutting boards and other Japanese goods in one order and one shipment.
