How to use it

One juice for the bar, the kitchen and the pastry section

Yuzu has a strong aroma and a clean, sour taste. Use it where you use lemon or lime juice. A small amount changes a dish or a drink.

Bar

Highballs, sours, daiquiris, margaritas and spritzes. Also good in non-alcoholic drinks with soda, tonic or tea.

Kitchen

Ponzu, dressings, marinades and butter sauces. Add a few drops to sashimi, grilled fish, oysters and hot pot.

Pastry

Curd, sorbet, cheesecake, jelly, ganache and glaze. The aroma stays clear in cold desserts.

Food and drink makers

An ingredient for soda, tea, craft beer, kombucha, jam, sauces and dressings.

  • Shake the pouch before use. Natural yuzu oil and pulp can settle.
  • Add the juice at the end of cooking. Long heating makes the aroma weaker.
  • After opening, close the cap and keep the pouch in the refrigerator.

Yuzu highball

1 glass

  • Whisky45 ml
  • Yuzu juice10 ml
  • Soda water120 ml

Fill a tall glass with ice. Add the whisky and the yuzu juice. Top with cold soda and stir once.

Yuzu sour

1 glass

  • Gin or shochu45 ml
  • Yuzu juice20 ml
  • Sugar syrup15 ml

Shake all ingredients with ice. Strain into a glass over fresh ice. Add soda if you want a longer drink.

Yuzu daiquiri

1 glass

  • White rum60 ml
  • Yuzu juice20 ml
  • Sugar syrup15 ml

Shake all ingredients hard with ice. Strain into a cold cocktail glass.

No alcohol

Yuzu honey soda

1 glass

  • Yuzu juice20 ml
  • Honey20 g
  • Soda water150 ml

Mix the yuzu juice and the honey in a glass until smooth. Add ice and top with cold soda.

Ponzu sauce

About 200 ml

  • Soy sauce100 ml
  • Yuzu juice60 ml
  • Mirin30 ml
  • Rice vinegar20 ml
  • Kombu5 cm piece

Mix everything in a clean jar. Keep it in the refrigerator overnight, then take out the kombu. Serve with hot pot, grilled fish or dumplings.

Yuzu dressing

About 130 ml

  • Olive oil90 ml
  • Yuzu juice30 ml
  • Honey1 teaspoon
  • Salt2 pinches

Mix the yuzu juice, honey and salt. Add the oil slowly and whisk. Good with green salad, carpaccio and raw fish.

Yuzu miso glaze

For 4 portions of fish

  • White miso50 g
  • Mirin30 ml
  • Sugar15 g
  • Yuzu juice15 ml

Warm the miso, mirin and sugar in a small pan until smooth. Take it off the heat and add the yuzu juice. Brush on fish, chicken or eggplant and grill.

Yuzu curd

About 350 g

  • Yuzu juice100 ml
  • Sugar120 g
  • Eggs3
  • Butter80 g

Whisk the juice, sugar and eggs in a bowl over hot water until thick. Take the bowl off the heat and mix in the butter. Cool. Use for tarts, cakes and toast.

Yuzu sorbet

About 8 scoops

  • Water300 ml
  • Sugar150 g
  • Yuzu juice120 ml

Heat the water and sugar until the sugar melts. Cool, then add the yuzu juice. Freeze in an ice cream machine.

Recipes are guides. Taste and adjust, because the sourness of natural juice can vary a little by lot.

About yuzu

A Japanese citrus with a strong aroma

Yuzu is a citrus fruit grown in the mountain areas of Japan. The fruit turns yellow in late autumn. People use the juice and the peel, not the whole fruit.

Fresh yuzu is seasonal and hard to find outside Japan. With 100% juice, you can use yuzu all year.

Where Japanese citrus grows

Wakayama is one of the main citrus regions of Japan. Steep terraces, stone walls, sea wind and long hours of sun.

The orchards climb the hillsides. Farmers carry the harvest down the slope on small monorails and farm trucks.

Made in Wakayama. The juice is pressed and packed by a fruit juice maker in Wakayama, which works with citrus, peaches, yuzu and ume from the region. We confirm the specification with the maker for each order.

Questions about yuzu juice

Is this 100% yuzu juice?

Yes. It is straight yuzu juice with no added sugar. It is not a yuzu drink and it is not made from concentrate.

What sizes do you offer?

We offer 100 ml and 900 ml pouches. The maker can also pack 200 ml, 500 ml and 1,000 ml pouches. Tell us the size you need.

What is the minimum order?

As a guide, the minimum for the 900 ml size is 2 cartons, which is 12 units. We confirm the minimum for the 100 ml size in our quotation.

Can I get a sample?

Yes. We can send a small sample so you can test the taste and aroma. We quote the sample and shipping cost first.

How should I store the juice, and how long does it keep?

We send the storage conditions and the best-before period on the product specification sheet, together with the quotation.

How is yuzu juice used?

Chefs use it for ponzu, dressings, sauces and marinades. Bars use it for cocktails and non-alcoholic drinks. Pastry chefs use it for sorbet, curd and cakes.

How much yuzu juice do I need for one drink?

As a guide, 10 ml for a highball and 20 ml for a sour. One 900 ml pouch makes about 90 highballs or about 45 sours.

Can I use yuzu juice in place of lemon juice?

Yes. You can use it where you use lemon or lime juice. The aroma is strong, so start with a little less and adjust to taste.

Can you ship to my country?

Food import rules are different in each country. Tell us your market first. We check the documents with the maker before we quote.

Can I order yuzu juice together with other products?

Yes. You can combine the juice with kitchen knives, cutting boards and other Japanese goods in one order.
